So, over a week ago we started our first batch of pickles. The thing I read said that after 3 days or so, it would start bubbling and then we would have to skim stuff from the top. Every day I have checked, no bubbles and nothing to skim. Did we do something wrong? I'm keeping a bag on them filled with water to keep them submerged with a towel (t-shirt) over them and in a Cool, dry place.

Doesn't sould like you're doing anything wrong. The site I checked said that if a skim starts to scrape it off. So maybe it doesn't always do it. We pickle peppers using vinegar. Then use the peppers for cooking all winter long

We just used the pickling salts that came with the crock. I guess we will give it a little longer. They don't look bad and they smell awesome lol

Also, if anybody has some good pickling recipes, I would love them. Whether it's for pickles, peppers, okra...anything else

I have a friend that puts a few hot peppers in the brine with his dill pickles. It gives the pickles a "kick" that I like.

Reminds me if hot spicy pickles.
Take a jar of pickles, drain juice, add all the sugar you can, then add Tabasco sauce, then cap, shake, and add more sugar until you can't get anymore to fit. Lid on, put in fridge fir a week and chowdown.

Also, just reclaimed a glob size pickle jar at the wife's house. I smell another batch of spicy pickled eggs coming up.

My wife has been using the Mrs.Wages kosher dill package. Add vinegar and water and jar right away. They're pretty good and don't take long at all

I love the Mrs. Wages spices. The hot Salsa mix is even better using Rotella hot diced tomatoes. Never tried the pickle package.
our local Wally World carries Mrs. Wages products, and they're great!

Update, started forming scum. I think we just had too much water which caused the process to take longer. I could be wrong. Lol. Anyways, we tried one and they taste good so far but fully flavored. They have some decent spice too

Nice, if the man down the street has any fresh cucs I may try some. Will try Mrs Wages first, Wal-Mart trip tonight.

We've got 32 quart size jars from this year alone mostly kosher dill, some regular bread and butter, some zesty bread and butter. .. all Mrs Wages

On your next batch you should try doing bread and butter. They are so much better than store bought.
