Heres the young jake I shot this year it weighs about 8.5 lbs

Butter under the skin and rubbed on the outside along with a bed of onion and celery. Spice rub is smoked paprika, tyme, sage, rosemary and stuffed with the wifes stuffing. Probably about 2 to 2.5 hours at 325°

I'm impressed this wild bird was delightful!

Took 2.5 hours then let it rest 30 minutes.

Nice work, getting and cooking!

On wild birds I always dress with smoked bacon so don't need to baste.

The oven bag did the basting for me. I'd use it again for another wild trurkey it worked out great white and dark meat was very tender.

Yes it works great. We use em a lot to cook chickens or did. Aint seen any lately. The lazy house mouse thinks she can buy em already cooked at Kroger and not have to worry about breaking a nail. lol.
