You all know I have "a thing" for good knives. (Actually, I have "a thing" for any good cutting tool.)

When Mrs Inor and I were first married I spent more than I could afford at the time and bought her a good set of kitchen knives. But I never bought her a decent set of steak knives. The steak knives we have been using for the last 35 years are a set that we got for free from our bank (back when banks used to give you "free stuff" for opening a new account) before we were married and we were merging our finances together.

She asked me to sharpen them today so our Easter guests have something to cut the ham with. The steel in the steak knives is barely better than tin foil. So I finally gave up! After getting them mostly sharp enough to barely cut ham this weekend, I finally broke down and bought a decent set of steak knives!

That is a LOT of money for steak knives but, damn they are nice!!!

I have an old friend who’s deer skinning knife came from this city.
The blade is probably 60 years old and still sharp with a lot of steel left on the edge.

Those are some pricey steak knives but you’ll never need to replace them.

Cheap knives are great, for doing cheap knife stuff.
Use good steel for the good meat!

Should last your lifetime and then some. All you should ever need to maintain them is a good quality butchers steel.

Great knives made with great steel. My HS metal shop teacher first told me the praises of Solingen steel.

Mrs Inor must be very happy!!! Out of my price range though.

I made a set of steak and paring knives from Green River blank blades and osage orange staves. Steel was so tough it was a bitch to grind the tang to fit the stave profiles. Cost me ~$15 each plus my time.

I spent 5 days in Solingen in the spring of '92. I was in the knife biz then, and toured a bunch of the manufacturers there... Robert Klaas, Henckels, and finally got to meet my friend Henning Ritter at the Hubertus estate and knife works. Also went to Italy and Belgium to buy knives for our company and ship them back to the states. Tax deductible buying trip to Europe LOL. Capitalism rocks.

Putting up a Gerber carving set with flex blade and fork. Mom said the knife jumped back after cutting ham and it cut her.

Easter of 1976, it hasn't been used since, looks great in the walnut box that takes up space on the shelf
