This recipe is for two people. If you are feeding four then double all the ingredients including the amount to feed the starter

The night before add 1 1/2 cups of flour and 1 1/2 cups warm water to your starter and put it in a warm place loosely covered. (1 1/2 cup for each two people to be served)
The next morning remove 1 cup of starter for next time.
Mix the remaining 1 1/2 cups of starter with:
1 large egg beaten
1 Tbsp sugar (more if you like)
1 Tbsp melted butter
3/4 tsp salt
2 tbsp milk (2 Tbsp dry milk + 2 Tbsp warm water can be substituted)

Combine all the ingredients and add flour or water to make a thick batter (don't mix too long as it will make the hotcakes tough and chewy.
To make light and fluffy hotcakes you can add a heaping tsp of baking powder (NOT Soda) to the batter just seconds before pouring on griddle.
The baking powder will not affect the taste it only makes the hotcakes lighter and fluffier.

Grill at 375F to 400F and turn when the top starts to get a "waxy" appearance.

Serve hot with whipped butter and your favorite syrup!
