Has anyone come across a reference book that gives field to table how-to's?

Like how to make rennet for cheese and wines or how to grow wheat and make it into flour. How to make our own yeast. The things we as a society probably take for granted because it's at the store and may have, for the most part, lost the ability to do on our own.
