View Full Version : Lard, Cracklins and bacon.

I think the pictures speak for themselves. It took 5 hours to cook down all the fat, thereby making cracklins. Our friend in the picture kept us on task. This bacon is some of that I brined. It is good, but we wont be able to cold smoke any this year. The temps have gotten too warm.

That's almost 5 gallons of lard. We shared some.

I discovered southern cracklin's about 10-15 years ago. Oh hell yeah! I'm jealous!

Don't be jealous, . . . get you a black iron pot off Ebay, . . . head down to the butcher shop for some fat, . . . build a fire, . . . lean back and look at the sky, . . .

Just listen for the sizzle,..............

Yeah, . . . it's good............

OR, . . . do like I do, . . . put the fat in the crock pot and go to bed. It'll be ready the next morning when you get up :chef:

Way back in the day when I worked at the precast concrete plant the Mexican guys would do a whole pig every year for new year's. They'd bring a live pig to the plant and kill it. Then they cooked it in the ground all day. Anyway they also made chicharones. It's the Mexican version of cracklins. It's a lil different but really good. If you can find a real Mexican meat market (called a carniceria) they sell them there. Yall should try em if you get the chance. Might be worth looking into how to make them too.

We spread the love (and calories) around with the cracklins too. I actually don't care for them, but then, I am a Buckeye, not a true southerner.:p
