Make your pear butter like you do your apple butter, . . . at about the 2/3 way done stage, . . . take some out for a full fledged taste test (put some on some hot buttered toast, . . . have several hungry friends help out if you can), . . . and then adjust however you need to do so for taste.
You have to do the very same thing with apple butter, . . . simply because of the different characteristics of the different apple types. FE: granny smith apples take a lot more sugar than many others do.

Thanks Dwight55. I actually tried that and it just wasn't quite right. Although the apple butter was perfect.
i heard of one with it having hint of sage/rum
4-5 pounds of pears
1/2 cup of water
1/4 cup white or raw or light brown sugar
1/2 tablespoon of nutmeg
1/2 tablespoon of cinnamon
1/2 teaspoon of cardamom
1 tablespoon of ginger
1/3 cup of dark rum
sprig of sage if you like earthy taste
got this recipe from my mother today because I was talking to her about putting a pear or cherry tree in my yard
