    Neat thing is even when the fan is running the cabinet never runs out of smoke.

    Took it off at 4:30 pm 8 hours should outta do it.

    Need to let it refrigerate before I slice any.

    Nailed it again on the bacon. Taste tested both while wrapping to freeze. Remember the last belly I did was 2 different flavors both smoked with hickory.

    Half was original flavor I did the first time around and that's yummy with hickory. The other had leek powder cayenne smoked paprika etc and I like that too. Not too much heat just a small kick. I'll be making both those recipes in the future.
