    We both are really enjoying cherry it's a nice mild smoke that allows longer smoke times.
    Any hardwood pellets I would go 2 hours tops

    Yeah I found hickory with cheese can still not be over powering if you shorten the smoke time but cherry apple is preferred for cheese in my book.

    Good to know. Right now all I have is apple pellets anyways. I would like to do some mozzarella and use it on a pizza. I got the leeks, garlic and paprika ground up today. I still have some jalapeno to do but its vacuum sealed in a jar so it can wait. Will use the leek on some venison early next week.

    I agree with Duck. Apple is good. But cherry is the absolute best. Hard maple is also pretty good.

    Stay away from hickory, mesquite or oak for cheese.

    Well I got lazy and loaded so I didn't get any finished pics of the cheese. But as usual it was delicious. The mozzarella turned out good for being so soft I had no issues smoking it. Used cherry pellets smoke time was About 6 hours or so.

    Smoke on
    Doing some Kielbasa off set heat in the main grill smoke tube in the fire box with hickory pellets.

    Just got an early Christmas gift from the wife. Turns out its going to be dark while im BBQing so she decided this would come in handy. Its slick! Heavy duty chrome mounting clamp, 12 led bulbs, long flexible neck, runs on 3 AAA batteries. This thing is slick!

    Doing another small batch of vension jerky. Found a ball roast from last years deer and carved it up super thin.

    My oldest got me a bottle of this marinate last year I've been looking for a reason to use it. So here we go.
