    It's that time of year again...

    One of the things I was afraid I was going to lose with our move to the desert was the ability to cold smoke without going to extraordinary measures like Duck did with making the refrigerator into a cold smoker. But happily, as soon as the sun goes down, the temps here drop into the 50's and even the 40's pretty quick. We went to the grocery store this evening and they had a big sale on cheese! So I picked up a nice block of sharp white cheddar, a block of habanero jack, and a piece of horseradish cheese.

    I figure about 5 o'clock tomorrow afternoon, I will clean out the smoker and get setup. The cheese will go in about 6 and should be done just before I go to bed. I do not know if I will be able to do pictures, due to the darkness. But I am thrilled that I will still be able to get my cold smoking fix.

    What are ya'll smoking this fall?
