    Chicken brats

    Made 60 lbs of chicken brats. It took 3 of us about 6 1/2 hours.

    30 lbs chicken boneless skinless breasts.
    30 lbs thighs with skin on.

    Used feta cheese, spinach, black pepper, red pepper flakes, thyme, sage, smoked leek powder, kosher salt, old bay, liquid smoke.
