I've eaten stuff two years or more past the best by date without any adverse effects.
I remember looking into this years ago when I started storing canned goods in bulk.

I've eaten some home canned antelope that was in the back of a cabinet and hidden and forgotten about. I always date the lids on my canned foods. This jar was dated 4 years before I found and opened it. It looked good, it smelled good so I put it in a pan and brought it to a boil, nothing at all wrong with it. It was darned tasty too as I recall. I'm fixing to can this years antelope. I finally drew a tag, I haven't hunted antelope in 5 years now. I was missing some good eating.
